Salep Cookies with White Chocolate

Ingredients

  • 4 sachets of Salepi Olympos
  • 250g self-rising flour
  • 2 tbsp brown sugar
  • 10g cinnamon
  • 5g cloves
  • 5g cardamom
  • 4 tbsp shredded coconut
  • 50g raisins
  • 50g olive oil
  • 250g grated apple
  • 100g white chocolate, melted

Method

  1. Preheat the oven to 180°C (356°F). Prepare a baking tray with parchment paper. In a bowl, combine Salepi Olympos, flour, sugar, cinnamon, cloves, cardamom, shredded coconut, raisins, olive oil, and grated apple. Mix well.
  2. Use an ice cream scoop to form 10 cookies with a dent in the middle. Bake for about 12 minutes. The cookies should be soft and fluffy.
  3. Once the cookies are ready, remove them and let them cool. Fill the dents with melted white chocolate and let it set on the counter (or in the refrigerator until it solidifies).
